Marination ke liye:
Chicken – 500g (bone-in best hota hai)
Curd – 1 cup
Ginger-Garlic paste – 2 tbsp
Red chilli powder – 1 tsp
Turmeric powder – ½ tsp
Garam masala – 1 tsp
Lemon juice – 1 tbsp
Salt – taste ke hisaab se
Mint leaves – ½ cup (chopped)
Coriander leaves – ½ cup (chopped)
Green chillies – 2 (slit)
Rice ke liye:
Basmati rice – 2 cups (30 min soak kiya hua)
Whole spices – 1 bay leaf, 4 green cardamom, 4 cloves, 1-inch cinnamon, 1 star anise
Salt – 1 tbsp
Water – 6–7 cups
Dum Cooking ke liye:
Fried onions – 1 cup (golden brown)
Saffron – 8–10 strands (2 tbsp warm milk me soaked)
Ghee – 3 tbsp
Oil – 3 tbsp

Step 1 – Chicken Marinate karein
1. Ek bowl me curd, ginger-garlic paste, red chilli powder, turmeric, garam masala, lemon juice, salt, mint, coriander aur green chillies mix karein.
2. Chicken dalke achhi tarah coat karein.
3. Kam se kam 1 ghanta marinate karein (overnight best).
Step 2 – Rice boil karein
1. Paani garam karke usme salt aur whole spices daal dein.
2. Soaked rice dalke sirf 70% tak cook karein.
3. Rice ko strain karke side me rakh dein.
Step 3 – Dum Layering karein
1. Heavy-bottom pot ke base me marinated chicken spread karein.
2. Upar se half fried onions aur half-cooked rice daal dein.
3. Saffron milk, ghee aur baaki fried onions drizzle karein.
4. Lid tight karein (edges ko dough se seal kar sakte hain).
5. 10 min medium flame par, phir 15–20 min low flame par cook karein.
Step 4 – Serve karein
1. Halke haath se biryani mix karein taaki rice toot na jaye.
2. Raita, salad aur boiled eggs ke saath serve karein.
